MULTIFRI PLUS is a functional semi-finished product for use in all creams, sauces and baked dishes, wherever water needs to be retained.
It is an active fibrous base which can absorb up to 10 times its weight in water with a hydrocolloid (water-retaining) action.

Its use:
∙prevents the separation of water in glazes on baked goods (3% of the total recipe weight)
∙prevents water loss in custard creme after freezing (8-10 g per litre of milk)
∙can reduce the use of starches
∙prevents water loss in all fruit and vegetable-based sauces (depending on the fruit or vegetable)
∙prepares fruit for filling and poaching
∙thickens tomato sauces (2%)
